Mangrove wood is extremely dense, and its charcoal keeps that density: the pieces are heavy, burn slowly and hold a strong heat of around 830 °C for about six hours, with fixed carbon typically above 80 %. It produces a firm, long-lived ember bed that suits grills running through a full service.
Because it burns so slowly, a kilogram of mangrove charcoal does more cooking than a kilogram of lighter charcoal — a point distributors make to their restaurant customers.
