What oak charcoal is

Oak is a dense, slow-growing hardwood, and its charcoal keeps that character: it lights a little slower than beech, then holds a steady heat of around 820 °C for about five hours, with fixed carbon typically above 82 %. The ash is minimal, so the grill needs less cleaning between services.

The flavour is classic and neutral-to-savoury — the taste most people in the region grew up with, which is exactly why restaurants that serve traditional grilled meat ask for it.

Oak or beech charcoal — which is better?

How long does oak charcoal burn?

About five hours of usable embers at around 820 °C in a restaurant grill. Values are indicative and vary by lot.

Does oak charcoal produce much ash?

Very little — it is one of the reasons kitchens like it. Less ash means fewer interruptions to clean the grill and a steadier airflow through the ember bed.
